Creamy Tofu Curry

Ingredients

  • 1 block firm tofu (pressed and cubed)
  • 1 tbsp sunflower oil or olive oil
  • 1 onion (chopped)
  • 2 cloves garlic (minced)
  • 1 tsp grated ginger
  • 1 tsp curry powder
  • ½ tsp turmeric
  • 1 cup coconut milk
  • 2 tomatoes (blended or chopped)
  • Salt and black pepper to taste

Optional Ingredients

  • Spinach or Sukuma wiki
  • Bell peppers
  • Carrots

Instructions

Step 1: Prepare the Tofu

Press and cube the tofu. Lightly pan-fry until golden (optional).

Step 2: Build the Base

Heat oil and sauté onion, garlic, extra carrots/bell peppers and ginger until fragrant.

Step 3: Add Spices

Add curry powder and turmeric, stirring briefly.

Step 4: Create the Sauce

Add tomatoes and coconut milk, then simmer for 5–7 minutes.

Step 5: Combine

Add tofu, vegetables (sukuma/spinach) , and seasonings (salt & pepper) cook for another 10 minutes.

Step 6: Serve

Serve warm with rice, chapati, or quinoa.
